India Galyean was quick to brag on her mother’s cooking, but soon confessed that she got her passion for hosting from her Aunt Joy.

“I’ve always done family entertaining at my house”, shared Galyean, “I feel like home is a place for hospitality.”

Galyean recalled some of her friends from kindergarten, Traci Clements and Judith Ralston, and how they would gather together and cook everything from Chinese food to Southern Entertaining dishes.

“Even some of my girlfriends in junior high would come over after school so we could cook together,” stated Galyean.

To this day, Galyean still meets with her close friends and rotates hosting a monthly “Supper Club”.

“There are about 10-11 of us now. It’s like a Bridge club but with a different generation and with food,” laughs Galyean.

Galyean mentioned how helpful her husband, Hugh, was in the kitchen as well.

“I am messy but he is precise,” stated Galyean. “Hugh used to be a health inspector back when we lived in New York.”

After returning to Georgia, Hugh pitched an idea for a cooking show and Galyean was quick to jump on it. Galyean started the cooking pilot on Youtube several years ago and has been in talks with PBS on running the show.

“I like to go to local communities and obtain secret family recipes,” shared Galyean. “I get them to tell me the exact way they prepare their perfection.”

Galyean expressed her personal love of finding the best of a certain food and trying to mimic it, making several batches at once until it is perfected.

When Galyean isn’t cooking for family and friends, or tending to her three children, she’s finding other ways to entertain.

“I sing with several bands on the weekend and also teach chorus at Calhoun Middle School,” shared Galyean. “Singing is an outlet for me. Believe it or not, I’m excited to go back to work. I love my job!”

Today, Galyean is sharing her family chocolate recipes of “That Mama’s Icing” (created by her grandmother Martha Chitwood) that converts into "Aunt Nita's Chocolate Sauce" and “Joyce Bowen’s Brownies."

That Mama’s Icing

Ingredients:

2 cups sugar

1 stick butter (equivalent to ½ cup)

½ cup milk

½ cup cocoa

Combine all ingredients in medium saucepan and bring to full boil, stirring constantly. Reduce heat and let boil one minute without stirring. Beat until consistency to spread.

(To make “That Momma’s Icing” into “Aunt Nita’s Chocolate Sauce”, use same ingredients only reducing sugar to 1 cup. Follow same directions.) Joyce Bowen’s Browniess

Ingredients:

6 Tablespoons cocoa

½ cup butter, melted

1 cup sugar

½ cup self-rising flour

2 eggs

1 teaspoon vanilla

Dash of cinnamon

Mix dry ingredients first, then add all ingredients together. Mix by hand until all ingredients are combined. Bake in a 9x9 buttered dish for 35 minutes at 325 degrees.

*If you prefer nuts, sprinkle pecans or walnuts on top for baking. Top with powdered sugar*
